Eating Healthy has not been a problem for many people. Emotional Eating, in my humble opinion has been the real culprit. When life challenges me, I go to my Comfort Space- The Kitchen. I have the experience of my journey now to know better. This doesn’t have to be a negligent choice. Although I’m in my feelings or my emotions are running the show, I still have some control. They’re many dishes that are my go to options when this occurs. Outside of my regular eating habits, I lean in on these choices to still be gentle with myself through this so called crisis and nourish myself at the same time.

When I worked full time, A 24-hr Live work situation, eating good or healthy wasn’t my focus. I put my energy into my job. As a result, my Health suffered. But once I took charge and started to make eating to care for myself more of a priority, access to what I needed to consume became more consistent. A bowl of raw vegetables was the base for a lot of my meals in the past 3 years. With toppings such as chickpeas, Lima beans, sautéed mushrooms, I was more energized and empowered to eat to live instead of the other way around.

Confession time, I was addicted to Bread for a looooonnnnng time (exhale). That felt good to say (lol). So to slowly ween myself off, I chose options such as Flatbread, Spinach Wraps and evening attempted to bake my own Bread with my Breadmaker (another blog post coming about that later). These were very easy to prepare and go aren’t as heavy as regular bread.

It seems these mushrooms skewers were lurking at my local Grocery store every time I would go there so I had to get them (lol). Another easy to prepare option. Just pop them in the oven or even pan sautéing will work, Season to your taste and voila. I use dulce flakes, a little braggs, and a blend of no salt seasoning and some Cayenne pepper to make them just right for me.

Fresh Fruit Smoothie Bowls are a great option for those overcoming sugar overload. Just toss some frozen Blueberries, Strawberries or even Mangos in your Blender and blend it out to your preference, add what you wish. Another quick and easy at the Ready recipe.

This meal is my Queen Mother’s option as an alternate to curry chicken that was a long standing favorite meal of mine since Childhood. This version is Ridiculously Delicious, because she adds the usual Herbs and Spices a little ginger and garlic and it is good! The Rice is prepared as a Traditional Caribbean Rice with Coconut Oil, Scallions, Onion, Pigeon Peas instead of Red Kidney Beans.
